Carrot halwa or gajar halwa is an Indian traditional sweet dish. It is cooked in ghee, milk and sugar and garnished with some dry fruits.

Here I used grated carrots, ghee, milk and sugar to make carrot halwa without any condensed milk or khoya. Three steps to make carrot halwa. First is to grate the carrot and saute it in ghee nicely. The second step is to boil the full-fat milk and reduce it to half and the third step is to put carrot (cooked in ghee) in milk and cook on low flame and when the carrot is cooked nicely in milk add sugar and cook the halwa nicely and garnish it with some dry fruits.

INGREDIENT FOR CARROT HALWA
- 250-grams carrot
- 500 ml full-fat milk
- 100-150 gm sugar or as per ur taste
- 10 Almonds
- 10 pistachio
- 2 tbsp ghee
How to make carrot halwa/gajar halwa
1. Take 250 gms carrot and peel the upper layer
2. Then wash it out nicely
3. Start grating the carrots in a food processor or grater
MAKING CARROT HALWA
1. In a kadai add ghee and carrot and saute it nicely for about 10 mins
2. On the other side keep another pot and add full-fat milk to it.
3. Let it boil and reduce it to half stir in between
4. Once the milk is reduced to half add carrot in the milk
5. Lower the flame and cook the carrot in the milk.
6. Close the lid and stir in between let it cook nicely on low flame
7. When it is 80% done add sugar and stir well and cook on lower flame till the milk gets evaporate.
8. Once it is done switch off the flame and add dry fruits on top of it
9. Serve gajar ka halwa warm or cold with garnished dry fruits
TIPS TO MAKE CARROT HALWA
1. Use thick base kadai or not stick kadai instead of a cooker
2. Saute the carrot in ghee nicely to remove the raw smell
3.stir in between to reduce the chances of getting stuck
